| Campo al Mare Vermentino is produced from grapes cultivated in the zones of Bolgheri, Suvereto and the upper Maremma. Vines are planted at a density of 2,225 stocks per acre and yield approximately 7,500 kilos of fruit per hectare (3.35 tons per acre), of which 65% is used to produce wine. Grapes are harvested during the first half of September. After pressing, fermentation is immediately initiated in temperature controlled stainless steel tanks and carried out at a constant 17°C (63°F). Before bottling, the wine remains on the lees, without oak contact, for roughly a month, during which time the malolactic fermentation in blocked to preserve the greatest fruit freshness and acidity in the wine. The final blend is composed of 95 percent Vermentino and five percent Sauvignon Blanc grapes. Campo al Mare Vermentino is pale straw colored wine with green highlights that indicate its vivid freshness. The fragrance is dominated by white and delicate tropical fruits set off by notes of herb and sage which lead into a crisp, clean palate of finely tuned acidic balance ending in a persistent finish.
